What is Panzanella?
Basically, panzanella is a chopped salad made of soaked stale bread.
I adapted this recipe to use croutons because I am not a fan of soggy bread. If you have day-old bread and want to use it, here is the original recipe
When it comes to quick and healthy protein ideas for lunch, using canned tuna ranks up there as one of my favourite options! Tuna really is an underestimated staple, especially for lunch meal ideas!
This recipe uses pantry staples that come in handy when you are running low on fresh ingredients! Make sure add canned tuna and canned white beans to your pantry staple list!

Description
Think beyond the typical sandwich meal ideas when it comes to using tuna! You will love this tangy and crunchy quick and easy lunch recipe!

Ingredients
- 1 cup croutons
- 1/2 cup red onion, thinly sliced
- 4 sour pickles (chopped)
- 1/4 cup basil or parsley (chopped)
- 1 can of white beans (rinsed and drained)
- 1 can of water packed tuna (drained)
- 1/4 cup pickle brine
- 2 tbsp olive oil
Instructions
- In a medium bowl, mix all ingredients together.
- Toss with 1/4 cup of pickle brine and olive oil.
- Season with salt and pepper. Serve and enjoy!
Notes
If you are meal prepping this recipe, leave the croutons out of the mix. Add in when you are ready to eat you meal. Otherwise the croutons will go soggy. Ewe!
