Thai Black Bean Salsa is a delicious and easy-to-make dish that is perfect for a summer party. Make this salsa with black beans, corn, red bell peppers, red onions, cilantro, and a zesty Thai red curry paste. The curry paste adds a beautiful depth of flavour to the dish, while the black beans and corn provide a hearty base. The bell peppers and onions add a touch of sweetness and crunch. The cilantro ties everything together and gives the salsa a bright pop of flavour. Serve this dish with tortilla chips or on top of grilled chicken or fish. It is sure to be a hit with your friends and family!

My inspiration for this recipe came from Cooking Light magazine, but I had to make a few modifications. I love salsa as a snack, but sometimes it isn’t very filling. If I just have salsa and chips, I find that I end up filling up on the chips because the snack isn’t balanced and is missing the protein. 

Balanced snacks give you lasting energy that will keep you fueled between meals.

Thai Inspired Black Bean Salsa

Pair this salsa with whole grain crackers for the perfect balanced snack


Ingredients

Scale
  • 1.5 tbsp. of lime juice
  • 2 tsp. red curry paste

  • 1 tsp. sesame oil

  • 2 cups chopped tomatoes 

  • 1 seeded and minced serrano chile pepper

  • 2 tbsp. chopped fresh cilantro

  • ¼ cup canned black beans (rinsed)

     


Instructions

  1. In a medium bowl mix together the lime juice, red curry paste and sesame oil. 
  2. Add the chopped tomatoes, serrano chile and cilantro. Stir. 

This recipe tastes best if you let it sit for 10-20 mins to let the flavours blend together.
