- 2 cups of sunflower seeds
- 1 banana
- 1 cup apple sauce
- 1/4 cup of chocolate chips
- 1 cup of old fashioned oats (substitute whatever oats you have on hand)
- ½ cup of ground flax seeds
- 2 tbsp honey
Instructions
- In a food processor, blend the sunflower seeds, banana, apple sauce and honey until they reach a “peanut butter-like” consistency; it will clump at first, continue processing and scrape the sides as needed.
- Place the sunflower seed mixture in a medium size bowl and add in the oats, flax seed, and chocolate chips. Mix well until all the ingredients are blended together.
- Place the mixture in the refrigerator for 10-15 minutes for easier rolling.
- Roll the dough into 35 balls and store leftovers in the refrigerator for up to a week, or in the freezer to keep them longer. Enjoy anytime as a quick snack or treat!
