No Bake *Nut Free* Protein Energy Bites

Ingredients

  • 2 cups of sunflower seeds
  • 1 banana
  • 1 cup apple sauce
  • 1/4 cup of chocolate chips
  • 1 cup of old fashioned oats (substitute whatever oats you have on hand)
  • ½ cup of ground flax seeds
  • 2 tbsp honey

Instructions

  1. In a food processor, blend the sunflower seeds, banana, apple sauce and honey until they reach a “peanut butter-like” consistency; it will clump at first, continue processing and scrape the sides as needed.
  2. Place the sunflower seed mixture in a medium size bowl and add in the oats, flax seed, and chocolate chips. Mix well until all the ingredients are blended together.
  3. Place the mixture in the refrigerator for 10-15 minutes for easier rolling.
  4. Roll the dough into 35 balls and store leftovers in the refrigerator for up to a week, or in the freezer to keep them longer. Enjoy anytime as a quick snack or treat!
