Try this “beyond the lunchbox ” recipe idea for a delicious meal you can make in minutes! This is also a great recipe to use leftover hard boiled eggs!

Ingredients
Scale
- 1 can water-packed tuna (drained)
- 6 tbsp mayonnaise
- 6 kalamata olive (chopped finely)
- 4 slices of whole wheat bread (toasted)
- 2 hard-boiled eggs (sliced)
- 2 roma tomatoes (sliced)
- 4 slices of your favourite cheese (cheddar or mozza will do)
Instructions
- In a medium bowl, mix the can of drained tuna with mayonnaise until combined.
- Stir in the chopped kalamata olives.
- Toast up 4 slices of bread.
- Divide the tuna mixture onto the 4 slices of bread.
- Divide the slices of hard boiled eggs and place onto of the tuna mixture on the toast.
- Layer the tomato slices on the toast.
- Top with cheese.
- Broil in a toaster oven, or regular oven until cheese is melted.
