Mediterranean Tuna Melt

Description

Try this “beyond the lunchbox ” recipe idea for a delicious meal you can make in minutes! This is also a great recipe to use leftover hard boiled eggs!

Ingredients

Scale
  • 1 can water-packed tuna (drained)
  • 6 tbsp mayonnaise 
  • 6 kalamata olive (chopped finely)
  • 4 slices of whole wheat bread (toasted)
  • 2 hard-boiled eggs (sliced)
  • 2 roma tomatoes (sliced)
  • 4 slices of your favourite cheese (cheddar or mozza will do)

Instructions

  1. In a medium bowl, mix the can of drained tuna with mayonnaise until combined. 
  2. Stir in the chopped kalamata olives. 
  3. Toast up 4 slices of bread. 
  4. Divide the tuna mixture onto the 4 slices of bread. 
  5. Divide the slices of hard boiled eggs and place onto of the tuna mixture on the toast. 
  6. Layer the tomato slices on the toast. 
  7. Top with cheese. 
  8. Broil in a toaster oven, or regular oven until cheese is melted.
