Have you ever thought, “I’ll be good and have a salad”?

First of all, having a salad doesn’t make you good, nor is it a moral decision, or even the best choice! Sometimes eating a salad versus a balanced meal can actually leave you less satisfied and actually craving more nourishment.

 A while back, I went on Global TV to talk about some surprising facts about salads. I explain what to watch out for when ordering a salad at a restaurant and also how to make salads more filling.

This recipe is quick to make and works well with leftover cooked quinoa.

I double batched cooked this recipe because the original recipe that I used only made 2 servings. With two little ones on the go, I don’t have time to be cooking every meal from scratch anymore. This recipe is great for cooking up extras, and trust me, the flavour holds up!
