- 1 cup quinoa, Cooked
- 1.5 cup black beans, 1 can
- 1/2 cup onion, raw, chopped
- 1 large red bell pepper, chopped
- 1 clove garlic, raw, chopped
- 1 tsp Dijon mustard
- 2 tbsp white wine vinegar
- 1/4 tsp Windsor Half Salt TM
- 1/4 tsp Pepper, Black, Ground
- 5 tbsp olive oil
- 2 tbsp feta cheese (per serving)
Instructions
- Place the quinoa in a large bowl and add the black beans, red pepper, red onions, and parsley.
- Dressing Instructions: Finely mince a clove of garlic in a bowl. Add whole grain Dijon mustard.Pour the white wine vinegar or lemon juice into mixture with kosher salt and black pepper. Whisk to combine all the ingredients. Slowly pour olive oil, whisking as you go to incorporate.
- Pour the homemade vinaigrette dressing over the quinoa salad and stir to combine.
- Garnish with feta cheese, parsley or fresh/dried herbs before serving. This salad is good served at room temperature or chilled.
