This Apple Pecan Baked Oatmeal is an yummy grab and go breakfast.
Ingredients
Scale
- 3 cups of quick cooking oats
- 3/4 cups of brown sugar
- 2 tsp baking powder
- 1 tsp of cinnamon
- 2 eggs
- 1 1/2 cup milk or almond milk
- 1/2 cup of canola oil or vegetable oil
- 1/2 tsp vanilla extract
- 1 large granny smith apple. Chop into small pieces.
- 1/4 cup chopped pecans
Instructions
- Preheat oven to 350 degrees F.
- Line a 9 x 9 inch baking dish with parchment paper or spray with non stick spray. Set aside.
- In a large bowl, add the oats, brown sugar, baking powder, & cinnamon.
- In another bowl. Whisk eggs slightly. Add milk, oil & vanilla.
- Add liquid mixture to oat mixture and combine.
- Add apple pieces and mix
- Scope mixture into prepared dish and spread out evenly
- Top with chopped pecans
- Bake for 40-45 minutes or until set

- Serve with warm milk or other fruit
