This month I have been working on batching cooking breakfast recipes! This apple pecan baked oatmeal recipe made the top of my list for quick and easy meal prep!

One of the biggest complaints I hear from people who skip breakfast is that they don’t have time in the morning to make a meal, never mind sit down and eat it… and hey, I get it!

Mornings can be hectic, and there’s always a million things to get ready for before 9 am. It’s not hard to see how the idea of fitting in breakfast can seem a just a tiny bit laughable! Some of our clients also admit that they would rather hit the snooze button a few more times, and not prioritize getting up have their morning fuel.

Having a good list of quick and easy breakfast meal ideas is top priority if you are a breakfast skipper but want to try and commit to incorporating this important meal into your day!

You can certainly add this recipe for Apple Pecan Baked Oatmeal to your breakfast master meal list! It turned out to be a big hit in my family! It was quick and easy to whip up on the weekend. I portioned out the final baked dish into single serving squares, and put into the freezer. It was ready for me to pull out for a quick reheat + serve in the morning!

Apple Pecan Baked Oatmeal

Description

This Apple Pecan Baked Oatmeal is an yummy grab and go breakfast.


Ingredients

Scale
  • 3 cups of quick cooking oats
  • 3/4 cups of brown sugar
  • 2 tsp baking powder
  • 1 tsp of cinnamon
  • 2 eggs
  • 1 1/2 cup milk or almond milk
  • 1/2 cup of canola oil or vegetable oil
  • 1/2 tsp vanilla extract
  • 1 large granny smith apple. Chop into small pieces.
  • 1/4 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a 9 x 9 inch baking dish with parchment paper or spray with non stick spray. Set aside.
  3. In a large bowl, add the oats, brown sugar, baking powder, & cinnamon.
  4. In another bowl. Whisk eggs slightly. Add milk, oil & vanilla.
  5. Add liquid mixture to oat mixture and combine.
  6. Add apple pieces and mix
  7. Scope mixture into prepared dish and spread out evenly
  8. Top with chopped pecans
  9. Bake for 40-45 minutes or until set

  • Serve with warm milk or other fruit
