Hearty + Comforting Soup

Ross and I love mushrooms, We have them at least twice a week.  Although they can get pricey, I find buying the sliced brown mushrooms at Costco for $3.99 a flat the best deal in town.

I developed this soup recipe in my quest to introduce more whole grains into my family’s diet.  Whole grains are a great source of fibre, which will make you feel full longer.  Also, they are full of nutrients, including protein, B vitamins, antioxidants, and trace minerals.

In the recipe, I opted to use fresh tomatoes instead of canned. Yes, fresh tomatoes can be more expensive and a little more work than using canned tomatoes.  But anytime you are using canned foods, you’re going to see an increase in the sodium content of what you are eating.  

Also, I threw in a package of frozen spinach to add a bit of colour to the soup. I buy frozen spinach and add it to a bunch of different recipes to boost the nutritional content.  Frozen spinach is so simple and has a lot of bang for your buck.

You will find that the barley and buckwheat thickened up the soup to a hearty consistency.

In the end, Ross found the soup a little bland.  So if you to add some more flavour to the soup, you can add a dash of low sodium soy sauce or reduced sodium salt.

Hearty + Comforting Soup


Ingredients

Scale
  • 1 large onion, chopped
  • 4 cloves of garlic, minced
  • 1 cup pearl barley
  • 1/2 cup buckwheat
  • 4 cups raw mushrooms, chopped
  • 9 cups water
  • 156 ml tomato paste, canned (1 small can)
  • 2 vine tomatoes chopped up
  • 1 item Low Sodium Boullion Cube
  • 1/2 tsp cardamon, ground
  • 1 1/2 tsp cumin, ground
  • 1 tbsp seasoning blend, like Mrs. Dash
  • 1 tsp Windsor Half Salt TM
  • 1 tsp black pepper
  • 10 oz spinach, frozen, chopped, thawed (1 package)

Instructions

  1. In a large crock pot or slow cooker, add all ingredients. Stir all ingredients together.
  2. Cook on high for 4-5 hours. If you have time, stir every couple of hours.
  3. Add in thawed frozen spinach 30 minutes before serving.
