I’m a huge fan of honey mustard salad dressing, but I recently decided to try something new. Instead of using yellow mustard, I gave it a shot with Dijon mustard to see how it would turn out. Let me tell you, it definitely packs a stronger, tangy punch.

The recipe for the dressing makes enough for daily salad lunches throughout the week, and even some for dinner too. I always make a big batch of my salad dressings, because I’m way too busy to be spending hours on end crafting homemade dressings every evening. Plus, the dressing will last the entire week in your fridge.
I’m going to let you in on a little secret – I love making my own mixed greens. Not because I’m a crazy health nut, but because it drives me insane when I buy a bag of chopped lettuce only to have it go bad before I can eat it all. I mean, who’s with me on that one?
Your best bet is to buy your lettuce in its whole form, then chop it up and seal it in a reusable plastic bag (along with a paper towel). I’ve found that by doing this, I can get around 12 days’ worth of freshness in my fridge before I start to see any wilting! But of course, you can always choose to use bagged lettuce if you prefer.
As for my mixed-green salad recipe, it’s pretty simple. I mix together some kale, iceberg, butter lettuce, and romaine lettuce, which makes about 2 large popcorn bowls full. This should give you enough for two lunch salads, and one or two more salads at suppertime. Of course, I do like to switch things up from time to time, but the mix above is my standard go-to recipe.

Then make the salad dressing
Step 1: Gather Your Ingredients:
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
Step 2: Combine Ingredients: In a small bowl, whisk together the Dijon mustard, honey, and apple cider vinegar until well combined.
Step 3: Slowly Add Olive Oil: While continuously whisking, slowly add the olive oil to the mixture in a steady stream until it has been fully incorporated.
Step 4: Season with Salt and Pepper: Add in the salt and black pepper and whisk until everything is combined.
Step 5: Adjust Consistency: If the dressing is too thick, add a little bit of water, one tablespoon at a time, until you reach your desired consistency.
Step 6: Taste and Adjust Seasoning: Taste the dressing and adjust the seasoning as necessary, adding more salt or honey if needed.
Step 7: Store and Serve: Transfer the dressing to a jar or covered container and store in the refrigerator until ready to use. Shake well before serving.
