This classic oatmeal cookie recipe is a part of my core recipe list for meal planning!

Honestly, when I am busy and don’t have time to bake, I’ll purchase granola bars for my kid’s lunch. However, when I have time, I like to bake up these wholesome oatmeal cookies and portion them out into little bags for them to take as snack for school. I like to make 2 or 3 batches and put the extra cookies in the freezer. Let’s face it, out of sight out of mind 🙂 

The kids like to have these as a after school snack with an apple or cheese slices.

I love how versatile this recipe can be and you can make it all in one bowl!  You can add a variety of ingredients to switch up the flavour, like chocolate chips, dried fruit, flax, hemp seeds, or chopped nuts. I’ll even add granola to make it crunchier or a high fibre cereal. The combinations are endless.

Classic Oatmeal Cookie

Description

A simple classic staple recipe for any kitchen!


Ingredients

Scale
  • ½ cup butter
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1¼ cup quick-cooking oats
  • ¾ cup flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda

Choose to ADD 1 of the following

  • ½ cup mini chocolate chips
  • or
  • ½ cup dried cranberries
  • or
  • ½ cup walnuts

Instructions

  1. Pre-heat oven to 350 degrees F. Prepare a large baking sheet with parchment paper.
  2. In a bowl of an electric mixer, add butter, both sugars, egg and vanilla. Whisk on high for 1 minute.
  3. Add oats, flour, salt, and baking soda to the egg mix in the bowl. Mix until evenly combine.
  4. Fold in 1/2 cup of your favourite add on ingredient, like chocolate chips, or chopped nuts.
  5. Using a medium sized scoop or a large spoon, scoop dough (about 2 Tbsp) and evenly distribute on baking sheets, leaving about 3 inches of space in between each ball of dough.
  6. Bake 10-12 minutes, until edges are slightly brown. Remove from oven and let cool on baking sheets to room temperature. Enjoy!
